Almond Butter and Chocolate Chip Oat Muffins
Don't you just love when experiments turn into masterpieces? This muffin is exactly the case.
Almond Butter and Chocolate Chip Oat Muffin *can be vegan if you replace the chocolate chips with a non-dairy alternative!Prep: Grease the muffin tin with coconut oil Preheat: 375 degrees, Cook: 20 minutes Makes 6-12 depending on how large you like your muffins!
1 1/2 cups of old fashioned oats
1/2 cup of unsweetened almond milk
1 ripe mashed up banana
1/2 cup of chocolate chips*
2 tsps of raw honey
2 tps of pure vanilla
1 large spoonful of raw unsalted almond butter
1/2 cup of raw coconut flakes (optional)
The consistency is very much like cookie dough, so you can be the judge on if you need to add more or less of something! These are just estimates….I am not a very precise cook…I tend to just toss it all in and hope for the best.
